Cooking Classes with Be Healthy Now
Call to set an
appointment for me to come and cook for you and 3
friends. We’ll prepare quick, organic, tasty,
vegetarian meals, focusing on seasonal locally grown quality
foods and eating for energy. Recipes and Nutritional
information included. It’s Fun, we share Ideas, Tips and
Delicious Meals. If you have a particular food you'd
like to learn to cook, call and ask, we can prepare it
together. This month we’ll be preparing foods that help
Energize the body and assist the heart and small intestine,
Summer is here, it's time for bitters, quinoa, asparagus,
chicory, escarole, sesame, shrimp, coffee... Chinese
believe in Five Seasons and cook seasonal locally grown
foods. We will keep the tradition by preparing grains -
Taboule salad, greens pesto and soba. These colorful,
delicious dishes will satisfy the whole family. Do you
need some new healthy ideas or want to know how to substitute
ingredients for healthy replacements? Join in, bring
questions and get ready to prepare our meal together.
Classes are $60 each, sign up with a friend and save $10

Tuesday, August 5th,
7:00 - 8:30 pm "Maintaining Healthy Weight" - we all know
diets don't work. It's more about lifestyle habits and
how to keep our body fit while enjoying the journey.
Healthy weight does not mean being a thin model or actor (most
of them are very unhealthy). Do you feel strong, have
the stamina to do the activities you love doing? Explore
the foods that make you feel your best.

Summer Detoxification:
This is a wonderful time of year to give
your body the gift of a cleanse. Many of us eat lighter
in the warm weather naturally. The abundance of berries
and fresh veggies makes it easy to detox. Call about
doing a liver / gall bladder cleanse and rebuild your body for

I hope many of you are growing some
vegetables and herbs in your garden. If you live in an
apartment you can still maintain potted plants - herbs do well
indoors too. Fresh herbs give flavor to any dish.
There's something very magical about growing plants, snipping
off the leaves or fruit, adding it to a dish and eating it a
half hour later!
Let's keep the magic in the
kitchen - here's some easy-to-grow and delicious herbs you can
benefit from all year round. (Note: You can dry
and freeze herbs for the late Autumn, Winter and early
Spring.)

Basil - is food for the
brain. It's an antidepressant and is helpful for nervous
exhaustion and mental fatigue. It is known to stimulate
the adrenal cortex.
In some cultures, it is carried in
the pocket to magnetize money. Its aromatic influence is
said to help one to have an open mind.
Basil is an
excellent anti-viral spice and is used for colds, flu, chills,
nausea, and to prevent vomiting. It is used for
indigestion, kidney and bladder troubles, headaches, cramps,
and constipation.
Basil is an insect repellent
and the juice is used for snakebites in India. (Good for
the travel first-aid kit.) Applied to the skin, it is
useful to relieve itching and ringworm.
Dill -
the seeds particularly have many healing properties. The
word Dill comes from the Saxon verb "to lull" because it has
many tranquilizing effects. Dill is very useful for its
high natural mineral salt content.
Dill Tea - 1
teaspoon dill seeds to 8 oz. cold water. Bring to a
boil. simmer for 10 minutes. Drink before or with
a meal.
Dill helps relieve gas, indigestion, cramps,
and colic. It has been used for hiccups and insomnia and
it increases mothers milk. The seeds can be chewed to
freshen breath.
Parsley - is rich in nutrients
such as vitamins, minerals and antiseptic
chlorophyll.
Parsley can be chewed raw to freshen the
breath and promote healthy skin. Eating parsley after
garlic or onion will help deodorize the breath and the
body.
Used as a tea, it is a digestive aid, and
encourages free flow of urine. It can be used as a
poultice (chopped up and made into a paste) for insect bites
and wounds.
It reduces high blood pressure and clears
the arteries - eat plenty of raw parsley in salads.
For
bladder stones or kidney stones, drink 1 quart of parsley tea
a day for 3 days and then just 2 cups a day. Another
recipe is to drink parsley tea exclusively for 3 days to
eliminate these stones.
For loose teeth - drink 3 cups
of parsley tea a day.

Recipe - Pesto
Buy
Organic whenever possible
Ingredients:
1 Bunch (approx. 2 - 3 cups) fresh Basil -
washed stems removed
2 Lemons - fresh squeezed (seeds
removed)
2 - 3 Cloves Fresh Garlic (cut in half, press with
side of knife and remove skins)
1 - 2 Scallions, washed,
cut off roots and tips.
1/4 cup Extra Virgin Olive Oil
2
Tablespoons Pine Nuts (or Walnuts) for a creamier texture, add
more
1/4 Cup Grated Peccorino or Parmesan Cheese
1 pinch
of Kelp powder or sea salt
Directions:
1 - In a blender or food processor, add the
lemon juice, garlic, olive oil, and remaining ingredients,
blend up until a paste is created.
This can be added to
soba noodles, fish, even salads. Get creative paint your
menu with this scrumptious green sauce.
Optional -
Substitute Parsley for Basil. Sprinkle with toasted
sesame seeds for a little added crunch and flavor!

Welcome Spring
2008! Bring in those lovely greens and sprouting
flowers, leaves, vegetables. Spring is a wonderful time
of renewal. Many of us do our cleaning this time of year
- whether it be your closets, your head, or your liver, it's a
great time to clear out the winter accumulations. Call
about doing a liver cleanse and rebuild your body for the
summer. (631-775-6196).
Have you already started
cleaning out, giving away? When we do, we allow for new
things (or people) to come into our lives. It's pretty
neet. We block new things from coming our way when we
are clogged up with stuff we don't need, or use. This
includes thoughts that don't serve us, they change our
chemistry and create imbalances in acid / alkalinity,
homocystine & cortizol levels are raised, free radicals
are formed, it's amazing how our thoughts really can make us
ill. Foods and thoughts that are toxic make us feel
sluggish. The inhibit us from having the energy to clear
out space for a new life experience. This puts us in a
rut.
It's time to blaze new trails, get on with your
living, find joy in what you are doing and create your own
health and wealth through happiness and satisfaction.
You may ask yourself the following to help guide you to your
joyful life:
- What is successful living? (I'm
not talking about a career, life is more than a career, though
that is part of it.)
- When are you
the happiest?
- What makes you laugh out loud?
-
Where do you find Peace?
It's time to revisit
these places. Often times we get so wrapped up in life's
trivialities that we lose sight of what is important to us in
life. We're human, it happens, but don't stay there too
long. When we keep these things in mind, we remain light
hearted, we keep focused and are happier. Your answers
to the above questions are the keys to Health and Wealth (both
are synonymous). (I could throw in "What is wealth?" for
another question.) Many people never ask themselves what
brings them joy. Many people focus on what takes away
their joy. What we focus on we attract. So choose
wisely where to put your thoughts.

Here's a cleansing Spring
Salad to help start your body's purification:
Recipe - Spring Salad
Buy Organic whenever possible
Ingredients:
In a large bowl, mix
together the following:
3 cups Mesclin Baby Greens
10 Dandelion Greens - washed and chopped
2 Kirby
Cucumbers, peeled and sliced, remove ends
4 stalks fresh
Parsley, washed & minced
1 Red Bell Pepper, chopped to
1/2" pieces
10 Kalamata Olives, pitted and chopped
1 - 2
stalks Celery, washed and chopped
2 Scallions (green
onions), washed and sliced
1 Ripe Avocado - remove seed and
scoop out the flesh, slice
Dressing:
1 Clove Garlic, peeled
and crushed
1/2 cup Sesame Oil
1/4 cup Olive
Oil
Splash of Toasted Sesame Oil
Juice of 1 fresh
Lemon
2 teaspoons Dijon style Mustard
1 Scallion washed
and minced
3 Fresh Basil leaves (or a pinch of dried),
washed and chopped
1 dash Shoyu or Tamari
sauce
Directions:
After the salad is
tossed in a large bowl, mix all dressing ingredients in a
glass dressing jar, stir, cover and shake well. Allow
everyone to add dressing as desired.
Variation:
Get creative,
see what's in the frig and add it. String beans, beets
(and their greens) - grated, tomatoes, cilantro, hot sauce,
fresh grated ginger is great in the dressing... The variations
are endless. Have fun!

We know February is the month of Valentine's
Day, and see hearts everywhere. Well how can we keep our
hearts healthy and happy? Do
chocolate and flowers or diamonds do the trick? Some may say
YES! But we all know there is more to it than
that. We do know that our emotions directly affect our
heart health (and overall health). We need to focus on
the positives in life and discard the negatives.
Learning to forgive, release the past, allowing for new
healthy life experiences to enter your world is a great gift
you can give yourself for Valentine's Day and Every
Day!
I'm sure many of you saw the Superbowl this week
and saw how the underdog - New York Giants - beat the favored
- New England Patriots. The Giants had to release their
fears and focus on the future and being positive and
winning. The Patriots probably thought they had it in
the bag, since they were undefeated all year, and were picked
to win. When we lose our focus, we lose.
It's important to know that we are all human and will
lose our focus at some point in our life, the idea is to try
to not lose focus on the most meaningful events in your life,
such as relationships, following our dreams (and know that
they are the path of least resistance), bringing up your
children, you know the "REAL" things in life! The other
stuff doesn't matter. Material things could never
replace these "Primary Foods." These non-foods feed our
heart! How many of you saw that commercial during the
superbowl (I know a lot of people watch the game just for the
commercials), the woman's heart jumps out of her and walks
over to a man and says "I quit" and walks away. You
wonder - wow, this is kind of gross, but powerful, but what's
the message? Is his heart giving up? Well, the
tagline is - Follow Your Heart! - it was for Career Builder -
how do you like that one? Pretty powerful considering
most people don't when it comes to their job, they do a job
for money, not following their heart. The word's out
folks, it's time to follow your heart, don't wait any
longer.
The world is changing, our way of thinking is
changing, we're taking better care of ourselves on many
levels. When we are aware, it is our duty to follow what
serves us and let go of what does not. See the
situations you want as yours, and the things that hold you
back vanishing into the distance. They no longer exist,
unless you allow them to. We are all in charge of our
own happiness, health, etc. we can't blame others for making
our lives miserable. No one can make us miserable but
ourselves, no one can make us happy but ourselves. When
we are happy others want to be around us, you'll find the same
energy you have they have. You may now realize it works
both ways. Like attracts like, so project what you want
to attract, become what you want to attract, i.e. a loving
caring mate.
Seek joy, in all you do. Follow your
heart, be gentle with your heart and the people and planet you
love. Pray for those who are in pain, offer a kind word
or meet them for a walk in the sun (yes, even in the
winter). Brighten someone's day. I promise, it
will brighten yours too! We are here to help each other
see the positives in the world and contribute to them.
This is how we change the world into a paradise. by creating
it within ourselves.

we get an extra day, make the best of it! Laugh often
and share your light with all you meet. Brighten the
world with your presence.
Recipe - Rice /
Mushroom Medley
Buy Organic whenever
possible
Ingredients:
In a separate pot, boil 2 cups
water add 1 cup Brown Rice - rinse and cook - takes about 40
minutes, so start with this.
2 Tablespoons Ghee -
clarified butter
2 or 3 Cloves Garlic, crushed
1
Teaspoon Capers
1 Red Bell Pepper, chopped to 1/2"
pieces
10 Kalamata Olives, pitted and chopped
2
Portobello Mushrooms, washed and cubed
1 dash Shoyu or
Tamari sauce
Directions:
Heat a large skillet at medium heat, add ghee,
melt, add garlic, capers, pepper, stir, cook five (5)
minutes. Mix the remaining ingredients together, stir
and cook an additional 10 minutes, stirring
intermittently. When mushrooms are softened,
done.
Note: you can sprinkle some nutritional yeast
on top to add extra B-12 and other B vitamins, great for the
nervous system and excellent source of protein for
vegans. Make extra brown rice and save some for soup,
salad, stir fries, etc.
